As a mage main, these are all things I do regularly. They are key bound, often macroed with stop casting and focus targeting as appropriate. What you are describing are casual fotm mage alts. They are in great abundance because “1 button mage rotation” is a common meme. Any decent mage main will have ready access to at least 10 utility spells (ie: CoC, Poly, Frost Nova, decurse, et al). Mages have one of the best tool kits in the game, if used properly.
Also, there are so many bad mages around now that I raid log the mage and just play an alt (healer is 70 and raid geared, working on a tank now). So you will likely see fewer good mages in pugs based on this as well.

I love all the fire/arcane mages that min-max to OCD levels, go all out all the time, & then pull threat & either die or cause group chaos, over & over. You would think that they would learn how to throttle their DPS or whatever accordingly after a distinct pattern begins to form…

Absolutely! If I see a mana bar, I know I’m using Earth Shock, every single time it’s available AND a Grounding Totem for good measure.
I will grant that as a player learns new areas and dungeons they may need to learn what curses exist and what can be removed, but there’s no excuse for not knowing those abilities exist in our playbook.
I won’t tell you how to play, I just won’t invite you to groups and guilds won’t want you either. Grouping up with 25 people isn’t about you being selfish, right?

I will say this… Spellsteal is mana intensive… there are times it is worth it… and times where the mob recast the buff so fast it is pointless…
