I think your proving a point a little. One moment we are killing gods, the next we are hanging out thralls unmentionables. There’s no consistency in the story as far as our power levels as I mentioned above. Also, I don’t care what some novel ret cons as canon. If my player character did something in game, then to me I did that action. Anyways, I think to an extent our players ARE an exception, at least enough of one were we should be able to be exceptions to the rule in regards to class choice.
Why should the player be an exception?

Depends on the context and the story being told. For classic it makes sense for the player not to be. For retail and games like ff14 it does.

That doesn’t stop Void Elf priests, nor does it seem to matter for that one Velf Paladin in the capital.
Also when Void Elves were given high elf customization it was made clear that we’re expected to treat Void Elves like High Elves. Which we can’t really do while they’re locked out of Paladins.

I disagree on this primary point. Anything can happen within the rules of the setting, which is not always the same as “anything at all.”
But as luck would have it, Blizzard agrees with you on class restrictions. Their goal definitely seems to be the eventual complete removal of class restrictions, and they’re already there for most classes that won’t require a lot of new art assets. The remaining restrictions on Paladins, Shamans, and Druids are solely logistical, since each unique race requires unique assets for all these classes.
Evoker is a somewhat unique case, but I don’t think it’s too far outside the bounds of reason that some crazy goblin could work out the bio-engineering techniques of Neltharion and Nefarian and sort of “infuse” dragon DNA/essence into other races eventually, to give them Evoker powers.
Retail is an extension of classic, regardless of if you actually played during classic you the character are THE GUY/GAL who participated in all those historic events. That never changed and is a large part of the reason why you are treated special now, because it would be weird if you weren’t after all that.

Some quests will actually give you different dialogs if you have done different stuff, I think it’s pretty cool.

Sorry, this isn’t 100% true for all players. What I’m referring to is the intro your player goes through. For example, if you played a Orc Warrior in classic then yes you are the random adventurer who eventually DID gain power, likely through honing their skills through their journeys. However, if you are a newer player such as a new generation death knight, or a player going through exile’s reach you are NOT the classic adventurer. Two different paths but end up at the same spot. That said, the players are both exceptions in their own ways based off events such as legion, shadowlands, etc. but the way we got there is different.
