I want to make some Jollof Rice, but I need a food processor… mine is on loan to a friend of mine. I guess I’ll bug him for it today.
Jollof Rice
Ingredients
- 1 medium red bell pepper coarsely chopped and seeded.
- 2 medium tomatoes, chopped or 1/2 can of diced tomatoes
- 1 small Scotch bonnet pepper (or use a habanero pepper), or red bird-eye chilies stem removed (adjust to taste)
- 2 medium onions cut one roughly and one thinly sliced.
- 2 tablespoons oil
- 1 cup Basmati or other long grained rice
- 1 bay leaf
- 2 tablespoons tomato paste
- 1 tablespoon Curry powder
- 1 cup vegetable broth or water
- Salt to taste
- 1 teaspoon dried thyme leaves
Garnish
- 1 tablespoon butter, or coconut oil to finish.
- 1 stalk of green onion / chopped.
Instruction for stove top.
- First, place the red bell pepper, chilies, roughly chopped onion, and chopped tomatoes in a blender or food processor. Next, turn it on high and mix until it forms a a puree.
- Once the puree is ready, sauté in pot and then add in the thinly sliced onions. Make sure to cook them until they turn translucent and begin to turn golden or about 2 to 3 minutes.
- Next, add in the prepared bell pepper puree and tomato paste and sauté the mixture for 5 minutes. As it cooks, keep stirring the mixture in intervals.
- Once the mixture has cooked, stir in the rice, bay leaf, and thyme leaves.
- Stir in the 2 cups broth or water and mix well. Add in curry powder and salt to taste.
- Stir in the rice until well mixed, then reduce the heat to low.
- Cover pot and let cook until rice is al dente, about 30 minutes. Check after 30 minutes. when the rice is fully cooked, sprinkle the chopped green onions then use a fork and fluff the rice.

I have kept up on maintenence and only put 14k on it. I onow you put a lot more on yours than i do mine though.

I have wanted one for over a decade. Now its my money and i don’t need to accomodste a lifestyle someone else cannot afford, so i can do it.
I’m kinda looking forward to getting something bigger. I really like the looks of the new Bronco, but would probably be happier putting gas in a Bronco Sport (which looks almost as good).
Also, are the forums being wonky for anybody else? CS is behaving more or less normally, but GD seems to randomly load really slowly and/or freeze up.

We, my team, has been pushing for it for awhile now and we still had the files for the ones that were made for us. The folks who work on forum features were able to spare a moment and incorporate them.
I can’t speak for community, but the files for CMs who originally had Avatars on the old forums should still be around. There are newer CMs who don’t have them though, so they may be forgoing until/unless all of them have one. shrugs
