What does everyone do with their coins? I can’t figure out why things like card backs and portraits can’t be purchased with them. I’m sitting on 15,860 coins and have nothing to do with them other than to buy card packs that I don’t need 
Er, do you mean gold? Because you can’t buy packs with Mercenaries coins.
If you do mean gold, then you can buy alternate Heroes and card backs with it. Not all of them, but a hefty number.
Me, I spend my gold mostly on Arena runs and Heroic Duels, which I’m bad enough at that I don’t get much gold back, and minisets.

You cannot buy card packs with coins. They will be used for future upgrades, as Blizzard has plans to increase the levels of all mercenaries. Currently, we don’t have any use for excess coins.
I think you are mistaken with gold, believe OP was talking about Gold not mercenary coins.

Yes, I am talking about regular gold, not mercenary coins. My bad wording! 
That’s a good haul. I’d keep saving and buy 130-150 packs for next expansion which should get you 90% of the cards. And craft any Legendaries you still want with dust from the multitude of extra cards you’ll have amassed. And you’ll still have gold left over for the next mini-set.
Currently I’m sitting on about 10k gold, but I also have 62k dust. I typically buy the small pre-purchase bundle, but this time around I’m just going with gold for packs and dust to fill in whatever Epics and Leggos I need.

For the majority of the ones that can be obtained with gold, go into crafting in your collection and change tab to either card back or portrait as appropriate.
Old portraits that show up in the shop can generally also be purchased for gold.
Otherwise, cosmetics are generally targeted towards those who want to spend real money on the game.
I spend it on heroic duels. Other than that, just save it up for expansions. I usually buy 10-25 packs when they first release.
go in your collection and look at your cardbacks and hero portaits.
If they are light blue instead of grey, you can buy them with gold!
Click them to check if they are available for gold.
If you already have all of them: enjoy the game and have fun, it’s what the game should be about
