When I look at quest options now there is a scroll symbol. It used to be we got gold for quests. How to we open old quests that require gold?
Old quests are gone. The scrolls are experience points (XP) which move you along a reward track. As you level up in the reward track, you get gold, packs, and other goodies. You can find the reward track in your Journal (where the quests are, second button from the top on the navigation sidebar).

I found the reward track, but I need 700 gold to open old quests. I just go a few 50 golds. How do you open the old quests now. I have a bunch of them.

You don’t need gold to unlock quests, not sure what do you mean.
I just tried to open the quest ‘Galakrond’s Awakening’ The message says it requires 700 gold. If the scrolls give 50 gold how do we open the quests?
Ok, you’re talking about adventures, not quests. Galakrond’s Awakening is an adventure where you buy chapters to unlock cards. But those cards can’t be used in Standard anymore, they’re Wild-only.
If you still want them, you do have to earn enough gold to unlock them. You can do it by completing daily quests and claiming unlocked rewards from the reward track.
I’m still working on completing the Witchwood quests. I am getting a message that ‘Core quests are now 255 cards.’ Can I still do the Dalaran quests? Some of the adventures require 700 gold. How do we do those?
Same as before, you buy them and then play the adventure.
