Out of the current major npcs I like Genn. As for less major NPCs… Flynn Fairwind, Fiona, Tarenar, and Gidwin.
Flynn is just an awesome character and the whole pally pals questline with Fiona, Tarenar, and Gidwin is awesome. I want to see them come back again.
Edit: oh, and Khadgar! Khadgar is amazing.

Plenty of npcs I like, but given wotlk classic gotta mention Drakuru. I really enjoy that questline and wish there were a more evil option to work more with him and betray the argent crusade
