You can say that certain events are canonical, which is true; but there’s no way to have them all done by a consistent character. Because she isn’t a consistent character. Even within BfA, she’s not consistent across various media—see, for example, “Warbringers” vs A Good War vs the BfA intro quests for her goals in the War of Thorns. Then expand that problem across multiple expansions, and it increases exponentially.
The only way you can argue for any one version of Sylvanas is to disregard all the times she is shown to be someone else entirely. Too many writers, too many visions.
Sylvanas was a victim of a writer who had the intention of ruining her. That is why we can consider BFA as non canon since the story lead narrator was not honest and had bad intentions.
Sylvanas had never cared about the forsaken as anything more than her shield against the infinite: to die so that she wouldn’t.
