Who does this benefit? whats the point? Why change things that objectively improves the game for literally nobody?

Only engineers have an auction house in Dalaran. This is the way it was.

they probably removed it because it wasnt all inclusive and therefore didnt belong, or they wanted to force you back to a capital city to keep them feeling “alive and lived in” or some garbage like that

It seems Blizzard doesn’t really care Wuuv. They love to add things and remove things that make no sense to the reason why.
Myself being an engineer (as you can see from my fancy goggles), the AH isn’t appearing even with the appropriate level.
There is no reason for this change.
