If people want them purely for aesthetics then good news! You’ve been able to play one for the past 13 years just without the blue eyes, but that’s being fixed in Shadow lands!
As to lore reasons: What is it that Helves bring to the table that literally no other race couldn’t do better.

Yes, it was one of the race class combinations added in Cataclysm.
They originally had warriors instead of paladins, but that was in alpha or so around 2005.
If people wanted those aesthetics on the Alliance they had no option to do so. This is about playable Alliance High Elves after all. 
But you knew that already…
As to other races and lore, well Void Elves certainly haven’t done much in the lore department and they’ve had 2 years in an xpac with many void/old god themes to take advantage of yet with little to show for it.
What do Alliance High Elves bring to the table lorewise? They bring the story we haven’t been told yet about those High Elves who remained with the Alliance. How they have adapted and acclimated to living in human society. What vestiges of their old culture they’ve managed to preserve, and what they’ve lost or voluntarily left behind in order to assimilate. What new things they’ve incorporated as their own. And how their new generations are going to grow in this society.
How’s that just for a start?

It’s also why Draenei are so focused around having Paladins and the light.
They weren’t going to have shamans. Draenei came in because Horde got 3 Shaman and Alliance only got 2 Paladins.
I remember reading this in an old magazine, but I’d have trouble citing it.
If horde had just been given blue eyes it absolutely would not have ended lol it was the combined changes.
