Because Stormwind humans (the type you play if you create a human character) have no culture or history of shamanism. They’ve had the worship of the Holy Light for centuries as their primary religion.

The Stormwind humans in WoW, in terms of culture, represent a purely medieval Christian European/American fantasy, where shamanism is not typically practiced.
But it’s time for Blizzard to show us the outliers.
