Because the Alliance treats the undead very badly. But, in Darkshore the undead you’re talking about felt betrayed by Maiev, so they joined the Banshee Queen.
How are they different, especially in this situation where it’s Arthas’ own Val’kyr raising them?
The ONLY reason DKs were accepted into the Alliance is because Tirion personally vouched for them. He is dead, so who else would do so? Tyrande? Greymane? They would kill these undead elves on sight for fear they were being controlled by Sylvanas.
Oh, and after the actions of the Ebon Blade in Legion, I doubt DKs are in very good standing with the Alliance either.
They joined the person who destroyed their home and murdered their families? Oh, well now that I type it out, that does seem like the logical decision.

Its actually the easiest question to answer as far as storyline goes, they lost hope, and felt betrayed. Thats a very real thing in RL too. If youve never felt that all hope is gone and just embrace a new life, it might be hard… excons know this very well.

During the Horde quest where we actually kill and rez them, some of them reject this and get away free as angry wisps, while others succumb to being undead. Those who later become undead, some of them say:

That they felt that both Tyrande and Elune had abandoned them after they placed their faith in them, so they felt like they had nothing left and were forsaken. So perhaps there’s more going on than we know right now. Or maybe there’s nothing and after all they lost, they just gave up.
Well they’re raising them as Dark Rangers instead of Death Knights, so we can start there lol.
Based on the two quests that deal with this series of events, I think this is exactly what happened.

Well the way they see it, according to the quests, is that Elune and Tyrande were supposed to save them, their people, and their homes, and they didn’t. They instead abandoned them, caused them to lose everything, and now lose their life. So it’s time for revenge.
What, revenge against Elune? Or revenge against their living family members? LOL

When you’ve lost everything, you’ve just been beaten down over and over psychologically and emotionally. We’re not talking about the decisions that happy, healthy people make. We’re talking about decisions made when people are at their worst, fragile and weak and irrational because that’s all their capable of.
You know how people say things like “It takes a strong person to pick up after tragedy and keep going on with life”? Well, this is exactly that, except in a game. These are the people who weren’t strong enough to keep going.
Yes, and who put them in that position?
Before the Horde finally killed them, they wanted revenge…against the Horde. Why would the Horde killing them change that?
Watching a Warden break down because everything she’s ever fought for just went up in smoke isn’t unbelievable.
Watching a Warden break down and throw a hissy fit because “Muh responsibilities were too great! You left me to do everything all by myself, Maiev!” is laughable. Sira’s reasoning for joining the Horde’s roving elf-killing squads is literally that Maiev abandoned her (whilst being imprisoned in Black Rook) and that Elune did nothing while Teldrassil burned. One of these things is not like the other, and should actually be expanded upon so we can get a believable reason why a Warden decides to become undead and join her murderers.
Arthas could produce more Valkyr with Nerzuhls power. Also he was able to control the undead with that power. Sylvannas right now can’t we see this when she tries to control Derek. She then turns to torture to turn him. Yet for some odd reason when Sylvannas is killed it takes a valkyr to sacrifice itself to bring her back. Were as the writers ignore that aspect when raising other beings as forsaken. Lots of crap/hack/bad writing and direction at the hands of alex and danuser.
