Hungry-man dinner.
I wanted lasagna but did not have the mats for it so made a pasta bake instead.
Sauce:
Browned itallian sausage, sweet onion, garlic, red and yellow bell peppers, mushrooms, zucchini, yellow squash, fresh tomatoes, tomato sauce, oregano, basil, red pepper flakes, dash of sugar to the tomato sauce. Red wine to deglaze pan.
Cut sausage into bite sized pieces and brown then remove and set aside. Add onions and garlic to the sausage fat (or add some olive oil if needed). Cook until translucent. Add peppers, mushrooms, fresh tomatoes, and squash - with half of the seasonings. Cook until starting to soften. Deglaze pan with red wine. Combine meat, veggies, tomato sauce with rest of seasonings and set to simmer and heat through. This will finish cooking the squash and such as well.
Pasta Bake:
Select chunky pasta of choice like rotini, penne, or rigatoni. Cook in salted water until al-dente, Combine pasta, sauce, and cheeses (I had mozzarella, feta, and parm handy). Put in large baking dish, cover with more mozzarella, bake at 350 until bubbly and browned.

Today I am likely going to make some cranberry walnut muffins. I have dried cranberries soaking in some OJ to use.
Next week might be a spicy pumpkin and Andouille soup with caramelized onions and sweet orange bell pepper. Served with home made rustic crusty bread.
