Tough one! My soup choice often depends on my mood but:
My most common go to when I want the soupy good feels is a hearty vegetarian soba. (I’ll take an udon or a ramen if soba is not a choice but soba is always my first choice).
French Onion Soup remains my all-time fave and I finally found a vegetarian version that comes very close to the non-vegetarian versions I fell most in love with as a kid. Extra point if it comes in a crock!
Tomato soup can really hit the spot like nothing else
My Italian grandmother made something she called Friday Soup that I can nearly replicate. (Friday used to be no-meat days for Catholics, which she was, hence the name).
Hot and sour soup, but it has to be from one very specific place that uses enoki mushrooms near me.
And because it’s hot out now, gazpacho can hit like a a freakin’ elixir if made well!

I tried some gazpacho, I couldn’t liked it. It’s too cold, colder than ice cream. It’s kind of weird to eat cold soup with cold toppings.
