I haven’t watched a lot of anime tbh. In fact i don’t really watch tv shows or movies in general but have watched a couple animes that i liked
Hellsing Ultimate and Castlevania. Want to watch nocturne but netflix is not worth the sub anymore. Might watch it when people stream it on youtube one day

Princess Mononoke.
It really spoiled me as far as anime goes so I haven’t really had any more interest in the genre past this one movie and to a lesser extent Nausicaa, Castle in the Sky, and other Ghibli stuff that came before it. To be honest I didn’t even really like Spirited Away or Howl’s Moving Castle. As far as I’m concerned Japanese Animation crested at this specific movie and everything leading up to it and after it are just lame tidal forces.

Sailor Moon is an OG. I watched that when I was a kid decades ago. Tuxedo Mask was probably my first ever tv crush.
Death Note is probably my favorite.
Some others I enjoyed:
The first season of Sword Art Online (And only the first season)
Castlevania (I’ve never played any of the games, so I thought it was great).
Goblin Slayer is alright if you can make it past the first episode.
