Can anyone tell me where I can catch one for the traders log?
I haven’t done any pet battling so my pets are low level.
It’s rng. Any of the wild pets could be a uncommon or rare quality. But if you’re not really into pet battling, there are probably easier tasks you could do to fill the bar.

Warlords of Draenor has a pet trainer in Shadowmoon Valley who has 2 pets and 1 plushie. She’s the best pet trainer to level on, outside a certain pet battle trainer from the Garrison.
Buy the Anubis pet. It can solo it.
When she brings out the Elec Plushie, switch to your low levels and then switch back to Anubis to destroy her pets.

Uncommon refers to their rating similar to armor that can be common, uncommon, rare, or epic.
You have to battle wild pets. They have a green paw over their head. You can track these on the mini map after turning it on. You can only catch one pet per battle and have to win the battle to be successful. It may take a few battles to find an uncommon pet. It should show their quality in the tool tip.
Lower level zones should match the level of your battle pets. My UI shows the level of the battle pets available in each zone on the map. I don’t know if that is standard or from an Addon though.

An Uncommon (or green level) pet is the third level of quality of a pet after Poor (Gray) and Common (white). Getting a pet of a specific level of quality is purely a matter of luck and the old " try try again" principle until you get what you need.
The trick is to battle it without killing it - you need to reduce it in health low enough to capture it which, for someone unfamiliar with pet battling, can be a bit of a hit and miss thing.
I would suggest you pick up a few cheap pets off the auction house - level 1’s are fine because you can sit in Orgrimmar and battle the pets that wander around in there until you manage to get the Uncommon pet. Its very easy, if a bit dull at that level. You can also go just outside the city for more options.

Terrible turnip is great for catching pets of any low level but I forgot where I got that one. So you can go all over and look for any low level pets. Go to UC entrance even since you are undead, would fit you. Find some there and take a few.

That’s a drop from the Sunsong Ranch in MoP.
Edit: It is also excellent advice, as this pet’s initial attack cannot kill the pet it is battling. So you can safely use it to attack and tame. However, without getting it yourself, it is rather pricy on many AH.

The trader’s post mission for an uncommon pet was specific to Zaralek Caverns wasn’t it?
That task was so stupid. I flew around looking for a rare-quality pet thinking it wanted uncommon (or higher) and the rare pets didn’t count. It literally wants uncommon, specifically.

You could probably battle wild pets in Orgimmar and win an Uncommon pet battle. However, be very careful - that’s the way they suck you in and before you know it you’re spending all your time collecting pets

To the OP, direct answer to your question: rarity is RNG on pet battles, keep starting a fight until you see one with their name being Green(for Uncommon)
Odrogg in Highmountain and Training with the Nightwatchers in Azsuna also give good XP for leveling pets up

This short questline (you only need to do the first 3 quests) will get you there. First one gives you the pet, the third gives you a trinket to make it a rare.

Capture an uncommon rarity battle pet in Zaralek Cavern.
Is what it says. Or it did last time I checked, unless they changed it recently.

Could be a recent change, but it would be weird. WoWhead is showing just capture an Uncommon with no mention of Zaralek.
I’d check now if I wasn’t at work. They must have changed it as I think it doesn’t specify Zaralek.
