The last cutscene shows Sylvanas can be choked…
Is there anything in the Lore that justifies this? Did Blizzard really overlook this detail?

The fact that Sylvanas is a stinky rotting corpse cuts down on her waifu factor, so the writers are choosing to ignore it. Her needing to breathe is part of that.

Well, that could make sense, or maybe she was just crazy as a bat and was not thinking properly but it seemed they really tried to humanize that fight.
Did Blizzard explain to us literally and biologically how undeath works on Azeroth?
Where does the lore say that ALL undead don’t need to breath? How do we know she’s not just “brought” back into her body and now she functions biologically, but functions via undeath magic.
Do you see the problem here?
OUR LOGIC doesn’t matter. How SOME undead works in Azeroth doesn’t matter to how other undead work.
We can’t use pop culture to determine this other, from other universes.
Sylvanas can be chocked… Therefore she can be chocked. It’s not a contradiction to lore or something contradictory to undead.

Death Knights need to breath… They drown if they spend too much time in Water…
Preserved Undead need to breath while Decayed Undead don’t need to breath.
Reminds me of this;
I think Blizz legitimately forgets that forsaken aren’t supposed to be living, breathing people.

Things undead tend to not have, though the writing is so inconsistent that it wouldn’t surprise me that they forgot that.

In the game… All Undead are not the same. They all have different properties.
Sylvanas is not a Forsaken but Elf. She’s a completely different kind of Undead. Even different than normal Banshee.
They actually are.
Recognized as such in Cata, and the racial was changed to have no underwater breath in WoD or in that area.
Even before that, the explanation was never them running out of breath, but falling apart in the water.

In the lore undead have no biological functions, the only thing animating them is magic, Sylvanas don’t need to breath, the only reason any undead use their lungs in the lore is for speaking, or banshees screeching.

I heard you can decapitate a Forsaken and put their head into a jar like in Futurama 
(I wonder if it would work for DKs
