To be clear… have to use at least 30 days first meaning the first available 30 days after purchase or use the existing paid time with tokens and THEN use the 30 days that was purchased with $$?

When you add time to your account, it goes on the end. So in your case, it won’t use the paid time until 2026.

If I add a sub to my free account for 1 month, will that count? I know it would be a month’s wait, but it would be THAT month, not a 2 year wait month, right?

Correct. As the Support article says:

After November 21, 2023, any player who cannot purchase a WoW Token for gold in-game will need to first purchase and consume at least 30 days of game time for real money. This can be done on any World of Warcraft account across the player’s Battle.net account to qualify.

A sub to your second account would begin consuming it immediately, and will reactivate token purchases when one month is done.
