I know there is probably a way to do this. I have tried on different toons. different levels. My highest is 60. I watched 2 people do it. But Nope. I land where they did. I walk just close enough to click and die. Every time. There are just some things I can’t do, or I don’t know the trick to do…yet.

The method is exactly as you say, just close enough to interact.
Did this in Zul’Drak just a few days ago. Take that Horde!
Maybe try a rogue or paladin if you have one of those. Rogue can help you maybe sneak in easier. Paladin you can bubble and grab the item, maybe even have some time to hearth somewhere safe.
Very easy. Get phased to moonguard or a very alliance heavy server sharding phase, and get it. Literally next to no horde.
I did it but I didn’t get credit for it towards the trading post.
The one I “stole” was from Undercity. Nobody was there, easy to fly in and take it.
Though make sure you aren’t in the new timeline where Undercity is filled with green smoke and destroyed. There’s an NPC near by to change timelines
It specifically states Orgrimmar’s or Stormwind’s flame. Undercity will not work.

That’s not entirely true. I’m on Moon Guard, and I snuck on my 70 rogue to steal the flame, and was met by 5 70s, and never got to steal the flame.
I assume it’s because an Orgrimmar Grunt has spawned, guards will begin appearing after hanging around a hostile location.
A couple of tips:
- Try off hours. Take advantage of the fact that less sweaty PVP bros are around at 3am
- Try a low-pop server. More people, more chances for active resistance. Less people, less chances of active resistance.
- Bring a buddy to be a distraction. Their purpose is to run around, fight and die while you ninja the flame.
You can only imagine my trepidation on MG stealing SW flame.
Years ago when doing the steal the flame for the first time from Horde big Cities…I did at 3 am in the morning time…nobody was on then…
Depends on time of day too. Early morning or later at night no ones really playing.
This was much easier done in a time without scaling, it broke everything and made the old stuff way stronger than it would’ve been.
Literally used to go in, ignoring the guards, sneeze on the fire to put it out, and jaunt back out while the guards whomped on me doing 1-2 damage.
I will say though, it’s better that the guards can actually do something now, before people used to just camp cities to death. They weren’t really safe areas lol.
I might try again later on tonight or in the morning. I’m usually awake before the crack of dawn anyway.
Grunts use Tebu’s? Dang. Lol

Only under certain circumstances when Star Wars releases a movie-- think that would make sense for May 4th. 
LMAO I use too camp the Iron Forge one for days…got me many a Honor Kill doing that…I’d throw down a ice trap and trap them then guards would be beating on them then I’d tag and kill them…

Is this because you’re level 60? I did all of these on a max level and didn’t aggro a single mob.

I dont know if leveling to max makes much of a difference, but I’m always able to get my flame without issue. I fly very high in the air so that the mounted guards dont agro and I take a look at the surrounding area.
If there are a bunch of flagged people camping out, then its clearly not a good time to go for it. But if everyone seems distracted with the trading post, dancing with the flames, etc, then you can quickly swoop right in and grab the flame.
If possible, do it on a druid, you wont need to fully land.
If possible, pick the smallest and non glowy mount you can (if not a druid).
You dont want people to be able to see you from a mile away.
