I’m considering changing servers and factions and curious to what I might risk losing by doing so? How will my horde garrison look, will i have everything that is currently in my alliance one ready and waiting for me in my horde one, specifically my auction house?

Regarding your garrison, I’m fairly certain you’re going to be starting from scratch.

What do you mean by “Lose my AH”? If you mean the server’s AH, than it’ll be fine.
I mean the AH quest we completed with our Trading Post during WoD so we could have one in our garrison…have a feeling if a trading post is replaced I may lose that auctioneer that I spent too much gold on to put together
As far as I know, the Garrison and whatever was unlocked in it, should swap over. That said, I don’t have any specific information on the Auction House through your Trading Post. It looks like there is a Horde and Alliance version of that quest, if I were a betting person, I’d say that it should swap.
And in the event that it doesn’t im assuming I’d just be SoL and have to do the quest all over again and spend a hefty price of gold buying the parts needed or waste even more time in Ashran pvping to get the parts?
Yes, in the event it doesn’t transfer over, you’d need to complete the quest again. Warlords of Draenor tended to swap over with faction changes as most quests had a direct counterpart. The later expansions, like Battle for Azeroth, have more unique lines so most of that does not transfer.

The current recipe doesn’t have any PvP parts, last I looked. Unless they put them back? Because during the period that Ashran wasn’t happening, they removed those drops from the quest.
That is correct. They removed that requirement when they temporarily disabled Ashran. I’ve done it recently and it still does not require the PvP parts.
I have transferred my Main back and forth and he has always kept his AH in the garrison regardless of faction.
