Do we have a profession gear mogger in any of our current TWW major cities, or do I have to drag all my toons back to Valdrakken to disable, say, an Herbalism shovel?

I think you are asking for the Profession Equipment Specialist (hide/show gathering thingies). And there is one in Dorn. Her name is Mahra Treebender and she is located right near the Repair person: Grotir, and the crafting orders place. Which is just down to the right if you are facing the AH.

I still think the grand expition yak would be a safer choice less traveling and u have a repair/xmog
But the Grand Expedition Yak has nothing to do with turning ON or OFF the showing of profession equipment.
Only the Profession Equipment Specialist (shown in my screenshot) has the dialogue options to either SHOW or HIDE your profession equipment.

True personaly i always click off the professions equipment when it pops.
Yes, you can click off the buff when it appears each and every time.
Some people may prefer to disable it showing past its profession use. Thus Blizzard enabled this NPC in Dragonflight and she has now also been placed in the current hub for The War Within as well.

Oh the shovel felt super minor compared to the Cursed Pickaxe. I somehow ended up with that on every toon I levelled so far. First trinket to go, haha. Anyway I appreciate ya!
