From a real company owner to you OP, you can determine the schedule and how many people you need yes. You CAN NOT determine whether a person that shows up and does a job gets paid or not. Upon hiring an applicant you both enter into a contract agreeing to reasonable compensation, and whatever other perks you may provide (vaca, insurance, bonus, etc.). You break that contract you get sued into oblivion. They dont work they dont get paid. THAT my friend is how it works irl.

Hundreds if not thousands, any proof from a level 10? Really says a lot about how inept of a leader you are if that many actually join and leave in all reality of anything. The only good point you might make (considering your post series here) is working hard as a guild leader, it takes more than you, unless the more likely case is you and flavor of the week have multiple accounts and bot yourselves.
