It does. And is that honestly really a bad thing? Who cares at this point. Just give all races, all classes. NO reason any race can’t learn to be ANY class from a class trainer. You can even create (lol) lore around it, if you must.

If you made a Void Elf Paladin, you’d explode instantaneously when you cast a spell. Lore should be abided by, period.
Now, I’d be in favor of Blizzard expanding existing lore to loosen restrictions, but let’s not go off the deep end.

Since Light Forged Draenei are basically just Draenei pladins that can be other classes, that makes me a doubble paladin!

That one has been explained that ICly undead heal with shadow magic, but for obvious balance reasons its not implamented. In lore they can technically use light magic it just burns them to do it so generally they don’t.
Lightfordged Death Knights?
Makes absoloutly no sense atall, they should just explode on creation since the light burns at undead. That said, again, blance reasons they couldn’t just allow every race to be deathknights except light forged Draenei because it would cause an uproar. Also applies to void elves, since undead can’t hear the whispers of the void they don’t really make sense, but it less outright wrong than Light forged deathknights.

That has nothing to do with body proportians, they can be druids because of the Drust ancestry. And they can’t be Paladins because the Silver hand has no presence in Kul’tiras.

What about void elf and undead priests?
I was just talking about that in another thread today. Void Elf and Undead Priests are a special case, frankly.
The argument and reasoning was that because Void Elves/Undead had a connection to the Shadow spec they should have access to the class. It’s very flimsy reasoning imo, but I can see why they did it. Can’t imagine not having a Void Elf Shadow Priest.
Feels pretty bad to let one half of the class prevent access to the other half. Still, there’s at least a scant bit of justification there.
Lightfordged Death Knights?
I’ve seen this one floating around and it’s a very, very weird combo. But they’re not mutually exclusive.
As we know, basically anything can be resurrected with enough power. The Light can even raise things into a weird form of undeath.
The Lightforged in particular, definitely aren’t protected from undeath. They may have been imbued by the Light, but their corpses aren’t suddenly unusable. You could reanimate the corpse.
The Light reacts strongly to (hurts) the undead, but doesn’t necessarily kill them unless destructive magic is used. That’s why a Forsaken Priest isn’t killed by using the Light, but he will feel a burning sensation if he does so. Interestingly, the Light will still restore his body by it (there are cases where Forsaken that repeatedly use the Light have their sense of taste and other things restored).
So in actuality, a Lightforged Death Knight would be very possible. It’s just that the fact that they’re imbued with the light would create a constant sense of pain in the Death Knight. Might even have worse ramifications, since the Light restores the body - could get ugly.
So uh… it’s weird, but it’s possible. It just really plays into the “Life is suffering” idea.

Bad example. That’s a cultural thing, not a body type thing.
Stormwind Humans (“thin”) worship the Light and have very little connection with nature. So naturally, paladins but no druids.
Kul Tiras worships the sea, not the Light. So no Paladins. On the other hand, they have absorbed some Drust culture, which is how they learned a very special breed of Druid.
