Hello, just bought the collector’s edition for Shadowlands on the blizzard gear store but I can’t find the digital key. I bought the CE cause I thought I would get the key now so I can refund my epic edition.
The collector’s edition is a psychical item. You’ll get the code when the box shows up. You may be thinking of the digital store to get the digital goodies now.

Correct. As has always been the case, Collector’s Edition purchasers will need to wait for the product to arrive before they receive their game key (included in the box).
That is part of the reason why we make accommodations for users who have purchased digital copies and upgrade with a Collector’s Edition key at a later time.
