These would be more of a mail class with robes like shammys. They need to be able to move take hits and cast. Plate doesnt fulfill that in the way these classes work in wow lore.
As for what would the next plate class be unless its tinker (which i dont want) i dont know of another class off my head thats in wow lore
I would like to see a class that uses mixed armor, plate chest legs shoulders, with leather and mail off pieces & warglaives, daggers, all one handed, shields. shields operate like weapons & have a hidden damage component only that class can see. mainhanding a shield vs offhanding a shield has different effects. dual shields tank specs. Two handed shields for dps

Such developments would position Evokers as the first class, aside from Druids, to offer such diverse specialization options, significantly enriching the player experience and gameplay variety.
