How long does it take to farm both Heirloom pieces (chest + shoulder), roughly? Can you realistically obtain them from a night of casual Heroics? Or is it a multi-week commitment?
You can buy shoulders with Stone Keeper’s Shards, so depending on if you’ve done your WG weeklies/how long you’ve been dungeon grinding, you might be able to buy those already. You can also get a decent weapon from them.
Definitely not multi-week commitment unless you’re only doing the dungeon dailies and starting from 0.

Ill be starting from 0, fresh 80, havent done a single WG or Heroic yet 
If you’ve been doing dungeons at all while leveling, chances are you have some Stone Keepers shards already. And both Storm Peaks and Icecrown questlines (that you should do at least once) have something like 70 badges total. It’s not a super fast grind, but at the very minimum you should do the Hodir questline in Storm Peaks. Gives something like 25-30(?) badges and unlocks the rep vendor for the BiS shoulder enchants.
Shoulders are 200 stonekeeper shards from WG vendor.
Can get weapon there too. Weapon can be useless if leveling a caster, but rest defo get it.
Chest for badges only.
Overall, 3-4 world tours will get you all looms.
Shards will get you Gun - Emblems will get you bow.
Shards will get you 2H sword - Emblems will get you 2H axe.
Shards wlll get you slick looking 1H sword - Emblems will get you ugly red sword/cleaver.
Shards will get you cool looking shoulders - Emblems ugly ones 
Chest can only be bought with Emblems.
Trinkets can only be bought with Emblems (always go after Haste one)
The other thing to note, Looms for Stonekeeper shards will have Resilience on them instead of another stat. Less intellect too. But the power difference is minimal. Like, you won’t even notice it. Like, damage 100 vs 101.

Doing all of the quests in Storm Peaks and Icecrown will award more than enough emblems for both heirlooms without even touching a a heroic.
Of course if you’d rather do heroics, you’re looking at roughly 1.5 world tours (so that’s two days if you’re running ALL of them, or a handful of days if you’re only doing a few a day). I just like the questing method because, especially if you save the bulk of Icecrown for post-80, they’ll give you enough gold for your fast flying in addition to heirlooms. 
as a tank or healer it’s pretty reasonable, just que for all heroics and people will just invite and summon, id say it’d take like 2 world tours, so two days of doing every heroic, maybe less. def less if you got for stone keeper shoulders and emblem chest.
it’s not even a grind…you get 50 badges+ a day, why do you even play when you don’t even want to do main end game content lol, baffles my mind, I have like 300 badges on one alt from just doing the daily heroic alone, it’s super fast.
not to mention you can convert any valor tokens you have to heroic badges
Just farm any heroic you can get groups for and you’ll have them all bought in no time. Forget wintergrasp as those heirlooms have resilience. You don’t want any of those unless it’s for a certain weapon type.
You can get both xp pieces in a single day pretty sure. One for badges, one from WG

If you just started its going to take a couple weeks to get enough stone keeper shards for shoulders.
You can spam heroics for 2 days or so and get 2 pieces. Just look at how many it takes and then check how many bosses there are. You will have to run every single heroic in a day plus some tho+
No you certainly cannot. We’re assuming hes asking from scratch not sitting there with 100 tokens and 30 badges already
You can do it in one day, assuming you are max level with zero badges or stone keeper shards.
You get like 50 badges from a world tour boom, one down
Between the WG weekly quest shards, and the shards from mythics you can get the 2nd.

yes you can, 50 badges + a day from heroic world tours, converting valor tokens to heroic badges…all can be achieved from scratch in less than 2 days…weekely wg quests, +shards from heroics as well, i literally farmed a cloth heirloom set 2 pieces+weapon and a rogue set in a week…
