I am trying to rename a guild which was named after a streamer that we used to play with and who isn’t playing this version of the game anymore ( Cataclysm Classic )
From what I understand the service is only available in retail wow…
Would it be possible in any way to achieve this?
Will the service be available in MoP classic?

I don’t think this is an answer Customer Support can give you as this is on the basis of the Classic Development decision, which does not visit the Customer Support forums. If you wish to provide feedback or a suggestion in relation to the Guild Services for Classic WoW, you can submit that feedback or suggestion via the in-game Feedback tool at Main Menu > Support > Submit Feedback or the WoW Classic General Discussion forums.
You will likely have to create a new guild with a new name if you want the name changed - unless you’re the GM and the name of the guild could be deemed inappropriate. In that case, you could try self reporting the guild name (something only the guild master can do) and seeing about getting it forced changed.
But if it’s not inappropriate, then you would be out of luck for changing the name. No one will have the information that can be shared about MoPC until their patch notes are released eventually. So no one would know who could give you that sort of information, I’m afraid.
