Go join PVE server before it’s too late. It will only get worse from now on.

No. I wouldn’t. Having said that, our group just did the three robot chicken escorts tonight (I’m actually alt-tabbed during the flight from Hinterlands to BB for turn-in), and we were fully prepared for potential gank attempts.
On a PvP server, you have to know it’s a possibility.
But it feels bad to me to even consider doing it. I wouldn’t.

Generally I don’t do escort quests because 90% of them are camped by griefers
If you’re on a PvP server it comes with the territory. Over the years I’ve learned where griefers hang out at … and I’ve learned to skip the questing and find a good quiet grind spot instead
Would I do that to someone? No … but the people who do want to do that will def be on PvP servers so i would go PvE if its too annoying for you (you didn’t say but I’m assuming this happened to you).
. >95% of the time, I’ll leave an enemy player alone during an escort quest.
However, if your name is “Drizzizztttt” or your guild name is [Dankk Knytez of KAOZ] … well, I hope you really like that NPC, because you’ll be seeing it ago very, very soon.

I’m not a PvP person, but actually feels like one of the more legitimate reasons for PvP. You are preventing someone from the enemy faction of completing a mission. What’s more legitimate than that?

Ganking someone on the mission ‘in dreams’ has to be the most jerk thing possible.
I don’t know how you PvP guys deal with it, you’re at the mercy of a bored rogue that decides to camp near and ambush you.

Yes. Will also wait 9 min to reach to that point just for increase the grief.
If you cant solo those at 50 l2p. Your on a pvp server so red is dead. Especially on pvp servers you should be making that your goal. Setting back a player on a 10 minute escort quest means they level 10 minutes slower and may not do xyz by time honor or anything is in the game. Take every advantage you can give your faction.
This is also why i roll on pve because i dont have time for that.
