Can you catch any type of “fish” in any zone or are certain ones zone/area specific?
Since no one bothered to reply to you, fish are zone specific, there are a handful of fish you might get from a particular area, but some zones have a higher chance for a particular fish.
You can use WoWhead to figure out your specific fish your looking for and the best spot to get it

Each zone typically has two or three different fish native to that zone and those will be the only ones caught there. (Don’t quote me on the numbers, it could be higher, but it’s almost always at least two).
This website that hosts the old “El’s Extreme Anglin’ Guide” has more information about fishing in WoW than you will ever need to know. It can answer questions you haven’t yet asked.
