Hey! I created a new character for SL and want to pick up some useful engineering gadgets. Does anyone have a good engineering guide for leveling up through various expansions and what recipes are the most useful?

Pandaria engineering: Goblin glider: Infinite use glider installed in the cape.
BFA engineering: Personal Space Amplifier: On use knockback installed in the belt.
Those are the two I use.
If you want explosives and the like, many have the 'less effective on targets above x level, Or they don’t work. Even the Stealthman from Dreanor flat out does not work after level 49.
I’ve yet to really play around with the Shadowlands explosives. I do not have mining on my engineer and so don’t currently throw gold at materials for the.
Nothing from engineering will work in a rated environment.
Outside of BGs, the various teleports and wormholes for each expansion are nice. The shadowlands one, in particular, is worth engineering on its own. Free teleport to any zone, including Oribos on a 15min cool down. Plus, auction houses in all expansion capitols are nice too. Lastly, Dreanor’s Ultimate Gnomish Army Knife has a bonus for engineers where you can revive dead allies on a 10min cooldown. Can’t be used in combat, but that has uses in PVP too.

I got so used to using the glider kits in BFA with the legendary cloak I completely forgot to switch back to doing this again in Shadowlands.

You shouldn’t.
I would use regular gliders and then put the parachute on your cloak and then you can use both in a pinch. Parachute is on a low CD too.
I also use nitro boosts also.
You would need to level up northrend engineering which depending on the cost of cobalt could be expensive.
