Death Knights are just Lightforged that died and didn’t blow up.
Canonically, the Lightforged don’t use Shadow as a Priest. Just like how the player Forsaken canonically only uses Shadow.

So who was the Forsaken priest pre-Cata? Alonsus wasnt a character in WoW until Legion.
There is no evidence to support either statement.
You want me to go through every single forsaken priest npc in the game at classic and see if I can find some using holy spells?
I do know that the undead priest trainers taught holy spells. But of course you’ll tell me that’s gameplay over lore. But I haven’t seen evidence of “undead are shadow only” ever being a part of the lore.
And even if it were it clearly is not now.

In 10.1.5 you can unlock them after level 40.
You can do the recruitment quest chain then.
Just ignore them. They don’t know there lore, and are making anything on the spot
