I have found Demo Warlock and Ret Pally to be the easiest to play for myself. Sorry to hear about your health issues, hopefully you can find a class that suits you.
As an Internet social behavior expert, id recommend to not give to much personal info and instead just ask what spec is simple for someone to play.

Play every class in the game. Download addon - Hekili - This addon is amazing. It will show you the rotation for your class as you press your buttons. I am autistic and ADHD, I have almost 0 memory for things, that mod makes the game a lot less stressful. I can play every class in game, and spec. I do what I remember in a rotation, if I forget something Hekili reminds mee about the ability.
There are a few other addons I use to help with the game outside that one, when I do more difficult content.

Ret pally is the brown ale of homebrewing. Pretty simple.
In the good old days, homebrewing kits intended for first-timers were always brown ale. This was good for aspiring brewers but not so good for a judge on a competition “brown ale” panel.
Yes, with very few exceptions you will live through a follower dungeon regardless of how it goes for you. The end boss of Priory is a little bugged in the 2nd phase, but if you’re not playing a healer, you are probably fine there too. They’re considerably faster than they were in DF, as Blizzard apparently decided the AI players might as well go ahead and do some damage, and the tank will flow from trash group to trash group without pausing if you stay reasonably close.
I think blood DK is simple, it’s 5-6 buttons, push them when they’re lit, you can skip the cooldowns most or all of the time in ordinary content, very rhythmic, but if you have tried it again since returning and it’s not for you, I can’t argue. Also it is gonna be annoyingly slow when questing.

Demon Hunter. I’m pretty sure you can literally faceroll and still play the class as well as could be.
Literally Ret Paladin.
That class is made for handicapped players that can only play with their toes or earlobes.
its 3 buttons and you absolutely clap. Can bubble and not die… self heal, and top #3 damage.
I currently have Fury Warrior, Ret Paladin, Beast Mastery Hunter and Frost Mage at cap. Those are the four specs I’ve been playing most consistently since release. Here’s how I’d rank them (barring Frost; I don’t think any mage spec fits your criteria):
- Ret Paladin for simplicity: Press what lights up.
- Beast Mastery for chill. Ranged is more chill than being in the melee scrum and not being able to see what’s on the ground, avoiding cleaves, etc. Still a simple rotation.
- Fury Warrior: Similar to Ret, but has more cooldowns to manage for its burst window.
Whatever you do, don’t play Enhancement.
BM Hunter has probably the lowest barrier to entry of any class. It does have a decently high skill ceiling for mastery, but if you’re not concerned about being in the top 1% you can do pretty well with it. Plus having a strong pet to tank for you makes the gameplay pretty relaxing.
You can spec destro and demo lock so that you have 3-4 buttons to push and can ignore the rest, and I think it’s easier than BM. For whatever reason though I’m just not into hunter that much (despite having some lovable spirit pets), so I probably am biased in this opinion.
