Mine would be fairies.
About as tall as Goblins, have wings, and a racial kind of like the DH jump and glide.
A race of large, bulky humanoids with varying skin tones from white and red to light-ish blue. Very muscular, very dim-witted, but those capable of using magic have two heads instead of one.
Would probably fit the Horde pretty well.

Golem like race, tall but not too human like in terms of looks. Glowing eyes and steam of a colour of choice.
Those are actually coming in Shadowlands so your dream could come true.
Elemental people. Like Genasi from D&D. Depending on the elemental you choose, you’d get a different racial.
Or demon people, like Spawn.
I’d do a race of elemental people. Humanoid ones with two legs, not the usual variety. Around the size of humans or night elves with their bodies made of earth, fire, water, etc.
Like a smaller version of Korg from Thor Ragnarok, with different elemental body types.

Assuming you mean “something new”, that’s tough given that WoW is kind of what people refer to as a “kitchen sink” setting. (i.e. It has everything but the kitchen sink)
That said, I’d like different types of playable undead, if that counts. Ghosts who haunt their clothing/armor, straight-up skeletons, etc.
Ethereals would be perfect.

The night fae are awesome but can’t help but feel it would be really hard to swing the story to make them leave the after life to fight in wars that ultimately lead everyone back to the afterlife.

Races already existing in lore can be okay.
But yeah the idea was be creative.
Tree people.
Sloths.
Circus clowns.
Easy. Lalafell. Done.
