Are you proposing that bad, damaging lore was hamfisted into the story so that people could play “the cute red ones” regardless of the damage such a decision may do to the primary antagonists of the setting?

To be fair, it was long established that a lot of Demons are just slaves of Sargeras rather than true believers.
There was even an archeology item in Legion that was basically a tool to make non-evil Demons artificially bad enough that they could do the deeds.

Someone has never played a Demon Hunter. It is a line from that class… like how humans have “Good Day to you!” when you interact with them.
Now on a serious note, I was always under the impression that the Demon Hunter eye-removal thing was a ritual, done purposely, in order to give the DH enhanced fel vision. Like sacrificing your eyes for sight-beyond-sight. Maybe I am tripping but I distinctly remember it being described this way at some point. “Demon Hunters ritually blind themselves in order to gain Spectral Sight” or something along those lines.
Which I always thought was a really cool piece of lore.

It’s both really. What I’ve gathered, they need to withstand it for a period of time to see the visions then are allowed to puncture their eyes out to get special sight.

Illidan actually became a Demon Hunter 10000 years ago.
The only thing he got in WC3 was Metamorphosis, which he stole from the Skull of Gul’dan, along with knowledge about the Tomb of Sargeras.
