Could throw either chicken or some cut of beef in the slow cooker to cook off most of the day. Shred it up afterwards. Can serve over rice, potatoes, whatever you’re feeling like. But using either as a base, you could do some with teriyaki or some Asian sauce with broccoli or veggies; make a gravy with the juice/drippings (or totally cheat and get a packet of McCormick gravy. Add veggies and/or starch. A small can of biscuits can be cut up or layered on top of the gravy simmering for easy dumplings of a sort.

Chili

Easy to make, easy to heat, can be served in a bowl, over rice, over a baked potato, etc.

There are a ton of recipes out there and most give good results. I am currently making venison chili with 3 kinds of canned beans, corn, fresh diced tomatoes, onions, bell peppers, hot peppers, garlic, tomato sauce, cumin, chili powder, oregano, bit of curry powder. Two cans of tomato sauce.

Beef gets browned first. Then onions and peppers get sauteed and softened. Put it all in a pot with spices and simmer.

Healthy would be using low fat meat of any sort and making sure to have those veggies and beans. You can even add cubed sweet potatoes or fall squash. They are great in it.

Now I REALLY wish I had a sweet potato handy or a squash. :frowning:

Sweet potatoes are finally being available from our local produce stands and such. I’ve already been baking them off and freezing them after peeling them clean so that I don’t have to do any work when I’m of a mind to do something up with them. But the local ones are so good, they don’t seem to last long.

Should make my carrot jalepeno soup its in this thread somewhere.

I am jealous!!! We don’t get local on those. How do they freeze cooked? I know normal taters get all grainy when frozen so that limits use of them in that context. I end up making stews and pot roast without them so I can freeze it then make the taters fresh when serving.

I am not shocked your local ones get bought out fast!

P.S. Dad is visiting next week and should be bringing me some of his garden goodies. He got something like 125lbs of taters, 50 lbs of onions, many cabbages, carrots, radishes, kale, beans, even growing rutabegas. I might get some taters, onions, carrots, and a cabbage. Kale if they have a frost. My plan is to make a nice corned beef dinner for him with those things.

They actually freeze really well. I’ll usually just cube them up after baking them and slap them in freezer bags so they’re easy to grab for whatever the mood strikes. I think I still had like one bag left over from last year, and we just recently finished it off right before I started to restock.

Also, when I really feel lazy and don’t want to turn the oven on, you can just toss however much your crockpot can hold with a bit of water to help them steam, and let them go for a few hours. Either way works!

This is very very valuable info. We occasionally get sales on them but they don’t keep well in the fridge.

Thank you. I suspect I am going to cook, prep, and freeze some batches.

High ticket queue timers ask for desperate measures.

We weren’t even aware of this option until one of our regular EU posters tried it and then the dam broke through on the EU side, I had 15 threads asking how to create an US WoW license before I finally made an imgur screenshot guide when new threads pop up I link them to it.

And now EU posters come over to the US forum for mailbox related help, pretty much the story.
