I started a little over a month ago and have been playing a lot.
Im confused by the “new season” and what it actually means to me and my progress on everything.
Any advice out there that you “wish you knew” before a reset to help me make sure I don’t miss out on anything I may not be aware of?

TWW currencies won’t reset. Honor and COnquest points will reset. You will acquire new points when the new season starts.
By progress you mean your M+ Score? Then yes, it will reset to 0, you can progress again in the new season. Addons like Raider IO will give you the chance to display your previous rating to others.
No, no quest will reset.
By Stats, you mean you pvp rating?, then yes it will reset. You will keep your gear but it will be outdated againts S2 version.
Simple blanket answer:
Anything that might provide POWER gets reset. You aren’t allowed to pre-grind anything that will give you a headstart.
Anything that’s cosmetic or collectible or will become obsolete, stays.
The only exception with TWW S2 is that Undercoins are getting reset for some reason, and honor points stay since they’re for entry-level pvp stuff only.
I’m not entirely sure if seasonal currencies reset with the patch or with the start of season 2, but they do reset. Non-seasonal currencies don’t. You won’t be able to access M+ or raids or probably M0 until season 2 starts a week after the patch. The item levels coming from accessible content might be lower than what they’ll be when the actual season starts, not sure. Before season 1 started heroic dungeon ilvl drops were lower but I’m not sure if they bother to hold them off in the short window between seasons or let you use accessible content as catch-up for alts and returning players right away.
Ahh. So I should grind out 15k honor on my main toon so I can buy full honor gear when it launches?
Now? No. You’ll lose it all the moment S2 arrives. You can’t pre-grind it, if that’s what you mean.
I though honor did stay until end of expansions, only conquest and bloody tokens reset?
It’s not worth going crazy since it can easily be earned in S2 either way.
Well, I am probably wrong then, I honestly thought it did reset. My bad! I don’t PvP so there is that.
Random forum posts from 2023 say honor only resets between expansions not seasons. 
So yeah, everything that resets is either reset on the 25th or the 4th? Just not sure which day, is that right?

There will be a new raid and storyline quests added.
They did clarify in the PTR that coffer keys would also be reset with the season for delves.
A random site lists these as the PvE currencies that reset:
Restored Coffer Keys
Undercoins
Valorstones
Gilded Harbinger Crest
Runed Harbinger Crest
Carved Harbinger Crest
Weathered Harbinger Crest
It also mentions to spend undercoins now if you still have any on things like the reagent pouch.
Not sure if season 2 delves have new reagents that they drop? I never looked into season 2 crafting.

Honor resets unless they changed it recently.
There are numerous posts on the wow forums both EU and US and reddit posts that say honor only resets between expansions and not seasons. These were posts during Dragonflight, so unless they changed it in TWW honor shouldn’t reset.
Thats a new change because previously it reset every single season.
I’ve been looking for a blue post about it, the most recent I could find is from Shadowlands:
Apparently honor not resetting between seasons has been a thing for awhile.
Since at least Wrath. I remember this question coming up in DF and looked back at every season ending announcement in an expansion with honor points and they only ever reset honor between expansions.
@OP: Definitely make sure you have at least 11k~ or so honor for the next season on any character you want to play. The honor gear will be better than current conquest gear and 11k gets you the whole set instantly. You can also transfer honor to your alts if you wanna play other characters that aren’t currently geared now in the next season. There is a slight tax on honor transfers though.
