This is relating to “the pen is mightier”, “mighty miners” “mix master” “gemcrafter extraordinaire” and “bushels and bushels”.
Despite myself and guild mates making/gathering the required items, they are not adding to the guild total of making/gathering.

I have also had the same experience. I have tested on several of my characters in several guilds - Fishing, cooking, mining, herbalism, inscription all have not counted toward any guild progress. Guilds range in size from a larger group to just myself and spouse so the max points has been ruled out. Disabled all addons.
