I haven’t been able to see my mount and pet collections for almost 2 years now.
I stepped away from the game for about a year but am back now for how long I don’t know but even when I stepped away I couldn’t see my collections, all I kept getting was that Oops window.
I like to collect things and like to know what I have and it’s very frustrating to always get that Oops window instead of being able to see my mounts and pets.
You might need to log into and out of that character a time or two to refresh the API and armory pages.
Not “exit game,” specifically “logout.”
Exit game sometimes works for equipment pieces here and there I find, but if you want to update that character’s transmog on the armory, for example, it needs a manual push.

Also, any issues concerning the Armory (and thus the website) will need to be posted about in the Website Bug Report forum.

The “Oops” message they referred to in the initial post is the website not wanting to display a collection page. I have seen it happen quite a bit with Armories. Attempting to take the URL for one of their collection pages and pasting it into a different browser presents a 500 website error message.

Fair enough.
You could try importing your pet collection into another site, and looking at it there.
WarcraftPets and Xu-fu’s Pet Guides sites both offer the ability to import your pet collection from the Armory, so you can take a look at what you have and what you might be missing.
There’s probably some similar sites out there for mount collectors.
