You can in normal bgs, but not in blitz. Your mmr is tied to your spec, so you can’t change your spec once you get into the game. Otherwise you’d have people tank the rating on one spec to manipulate things.

You can run Grimoire without a pet or run with a pet out without taking Grimoire. I tend to run with a Succubus pretty regularly, so no Grimoire for me. I use the Succubus on node defense.
My point is, you don’t need to swap out of your destro spec to demo for a pet to assist you for node defense. You can stay destro with your succubus out to achieve a similar effect. Just swap out of grimoire before the match begins and keep your pet out. You can command her to charm while you are in some cc unless I am mistaken.
