I am bored to death of tww content and lookin to go on an achievement/completionist journey going back to vanilla. All quests/mounts/achievements etc. Are they all still attainable or at least most? Are there any tracking addons to look for to keep everything in order, as id like to start it chronologically from classic. Besides my 8 +10s for vault i have zero upgrades or interest in doing tww stuff so im lookin for somethin more relaxing and always have been a completionist in most games. Tia!
Most are. And by that I mean like 99% if not more.
There are a bunch of Feat of Stengths that aren’t available, but those don’t necessarily count for points. The exclusives from those are not achievable anymore though which mostly consists of mounts and pets.
However, you can still get close to 1000 mounts even without those. I can’t remember the pet count, but it’s up there as well.
As for the rest, anything you see in your achievements tab is doable.

The only rewards that I can explicitly recall them removing was the Plagued and Black Proto-Drakes. Then I suppose there’s the MoP challenge mode birds. Gladiator mounts count too I suppose. I just remembered the mounts in Remix too, but those will likely come back in some capacity if I had to guess.
Anyway, you still have access to like 99% of the mounts in the game. Addons like All The Things, Rarity, and Enhanced Mount Journal can help you keep track of them.

I think the one I use for mount farming is MountFarmingHelper.
No clue on pets or anything like that. I just sort of get them and follow the achievements in my log.

I wouldn’t stress about the few that aren’t available anymore, because Blizzard always keeps the mount collecting achievements way behind the top collectors, like we’ll log on and get an achievement on patch day for a number we hit literally years earlier lol

Curseforge probably has a mount tracker addon.
Quite a few still are.
You aren’t going to get the level 120 achievement or Veteran of the 4th War if you don’t already have those, among a few other things.
But old mounts and instances are out their for the taking and the titles that you can get from these are still up for grabs. There is a whole lot of stuff to explore and gain from doing the older content.

I don’t know, you can still do BFA quests. I could be mistaken.
Just log into Vanillia, role a new 'toon, get your first quest and off you go.
Download the addon “All The Things”, it’s what I use for my “completionist” moments when I want to switch gears. It scans my account and tells me what gear, quests, mounts, pets, achievements, everything I am missing and where to find it.

A lot of those that got removed are coming back in trading post which is a much better way to get them than BMAH.
Some of my stuff from Wrath has turned into legacy or maybe it was FoS. And that was the two proto drakes if I remember right but may be wrong about that. THOSE are often on BMAH from what I have heard. As well as the black one which is much more rare as far fewer people were ever able to get it.
Most are, just not AOTC or CE mounts.
And the obvious KSM ones.
Anything FoS related.
Oh
And the old Zul gurub mounts aren’t either, they were replaced.

ATT doesn’t do anything that the add-ons I listed do.
ATT only has one use, to figure out what what a zone has. But it’s so overly bloated and massive that it’s simply not worth using. Especially as the OP made no mention of any other cosmetic other than mounts and achievements. The add-ons I listed are far more focused and useful whilst also being able to be used for other cosmetics that ATT outputs.
Look at my collections and achievements. Never once needed to use the bloated mess that ATT is.
