Ok sure. But ignorin’ that, I feel like their BlizzCon announcement did disappoint folks so I imagine the bare minimum they could do is at least throw some skintones/hair colors at the ARs.
I agree that they are a start, and they feel rushed. They all have potential, which is why I feel disappointed that they don’t appear to be getting any updates soon. Even for Vulpera, which I like, are lacking in some areas:

You’re right, but again, Blizzard is anti fun. It’s going to be another 15 years before we get more customizations.
I don’t expect BFA races to get much love. It would be nice.

And this also exists. The Void Elf in the Mage Tower that often walks with the other High Elf has a jet black haircolor if I am not mistaken.

Elf customization requests are never simple, or at least don’t stay that way. The thread will always devolve into a laundry list that grows progressively more furtive because Blizzard isn’t answering your prayers immediately.

Two things would make Void Elf customization close enough to “complete” for me (I say close enough because customization is “ongoing” amirite? /sarcasm):
Tentacle toggle - this alone sorta gives both male and female Void Elves several more hairstyles without actually creating new hair styles. The hair tentacles are NOT currently part of the hairstyles! They are a visual effect that can be turned on and off just like the Night Elf hair leaves. The only thing missing is a box to tick in the creation/barber UI.
Black & White as hair color options. Argue against “natural” hair colors all you like, but it never made sense to me that black and white were not Void Elf hair color options. Both of those colors are very fitting for the Void theme. They just also happen to work for non-void themes as well. It doesn’t help that we can see Void Elf NPC’s sporting black hair in Stormwind, that Blizzard themselves showed a Void Elf using that same black hair color when they first announced Void Elves inheriting Blood Elf skin tones, or that Alleria has white hair in void form.

For reals. I’ve been considering unsubbing because of that whole backtracking on “ongoing customization” in Shadowlands. My friends are the main thing keeping me playing right now since the content is kinda… done. And now I have less to look forward to in 9.1 since customization has been given the axe until who knows when.
I’d have more reason to to stay if I felt like I was making any real progress with anima gains so I can start actually getting cosmetics I want, but as drip fed as anima is from the content I am willing to do (and there’s quite a bit of anima I don’t get because I am not willing to do what’s required to get it cause it ain’t fun), I am moving at a snails pace just to unlock the covenant perks. Cosmetics just feel… out of reach, and nothing has been said of 9.1 doing anything about that other than “new sources of anima” being added. That’s probably just more world quests in Korthia that award 35 anima here, 140 anima there.

The tails I might understand if the Lightforged had some sort of detailing on them that made them differ from standard Draenei female tails, but looking at them in the model viewer I don’t see how it could be an issue. The same goes for ear sizes for Void Elves to be honest.

Yea, the fact that Blizzard’s own art decisions (Void Elf NPC’s with black hair, Alleria with white hair in void form) support the idea that black and white hair are part of the void elf theme, and the fact that those colors could also pull double duty as “natural” hair colors, just makes it a real head scratcher that they weren’t made options from the get go.
This is exactly how I feel and why I’m still around.

Speak for yourself my dear, I am smoking in this bod! Never thought I’d be able to make an elf in WoW that matched my RL skin tone and general attitude, yet here I stand!
Also, not to be completely contradictory to your post, but I think the eye choices are fairly ‘voidy’ in my opinion. Void is stereotypically done as ink black in WoW, but it’s really just any emptiness. So pale hues and solid shades would all be fair game for void eyes, so long as there wasn’t any discernable definition within them. That said, I’d kill for a glowing maroon or sanguine shade.
I do wish Void Elves had a jet black hair option, that would look sick with the tentacle and skin options available. Blizzard should also add pale, ghostly type hair colors. However, I don’t think we should ever get standard human or elven hair colors, but rather hues and shades that look apparition-like compared to standard human or elven hair. THAT would be Void themed, and a nice break from tentacle options.
Finally, Void elf customizations need to wait for a while. We got a bunch already, time to jump to the back of the line. Next up:
-Nightborne (they’ve been hurting)
-Worgen (they’ve been ridiculously patient)
-Lightforged Draenei (five faces and three skin shades is NOT cool)
-Kul Tirans (Ditto the Lightforged)
Honestly, all of the variant races just need to be customization options for the parent races, and not their own separate race.
orange N’zothy eyes would be cool option for void elves
and hair with textures that shift and change like the void effect seen on some enemies/void battle pets

The outlook for everyone is bleak, but as far as more options I support both natural and void options myself.
The natural options certain people want are fairly obvious and have been discussed ad nauseum, so I’m going to just list the Void friendly colors I’d like to see added.

I’d like to see this hair color added in some capacity as a white or maybe a light lavender option.
I’d also love to see an icy blue of a similar shade as well, such as this;
The skin tones would also be most welcome as well, offering a sort of pseudo entropic embrace tone you can have at all times.
Aside from that I’d love to see some starcursed color assets of pretty much every variety and a tentacle toggle.
More hairstyles are also a given. Aside from original styles, I’d prefer to see the Void Elves draw on Night Elves and Draenei, myself.
So far, NE hair hasn’t looked very good on the VE model though. Draenei is probably a good candidate though if I remember correctly.
