It says to destroy 2 enemies in one turn using fist of jaraxxus 8 times. I’ve done it multiple times but i’ve made zero progress on the task…

Currently there’s a bug that involves all tasks with multiple enemies. The tasks just don’t track.

Not all such tasks, and/or not consistently. I’ve read about this bug but had no real difficulty doing Varden’s Task 12 a couple days ago (I mean, it was annoying, as these tasks tend to be, but it wasn’t difficult and the task progressed as expected).
Re: OP - I bailed on Jaraxxus on task 10. He’s one of those mercs with the insanely stupid task design, and it’s not like he’s ever useful. Just abandon, and work on a merc with sensibly designed tasks, who might possibly be useful instead.
