So, I have been working on beating each Dalaran Heist chapter with all available characters. When I logged in today, all of my characters have the crown that says I’ve completed it, even on chapters where I haven’t played some characters yet.

This is a bug that was accidentally introduced with today’s update. Blizzard is already aware and working on a fix.
According to the post in the Known Issues list, this is a visual issue only; your progress is still tracked correctly.
