Do the class packs from completing the book of heroes or mercs give class cards of up until current sets? or just what was current when they were initially released? Do they only pay attention to standard sets? Are they worth holding onto for opening later for different cards to be given? etc.

Those will give you cards that are in Standard at the time that you open them, so at this point you could wait for the 19th and they would be able to contain the new cards.
