Same issue… WOWHEAD has a solution which is a workaround. Specifically NEVER hold the mouse right click button down when you use the BLINK (#1) vehicle ability. It is really really really hard to retrain yourself sigh. It is holding the right click key down on your mouse that disconnects you when you use Blink. I HATE vehicles in wow… super clunky all the time.

Fixed as of September 4th 2023 (if not sooner) by blizzard. Holding down the right mouse button while using the blink spell no longer dc’s you!!!
