They didn’t commit genocide. Let’s look at the facts:

Ok, he’s got good reason to hate the Elves. (Specifically the Blood Elves, later named)

This was his goal, likely in his experience with the loss of his family and his dealings with Elves.

Garithos did not enjoy having to work with the blood elves or dwaves, believing that the Alliance mission should be to preserve humanity above all else and that the Alliance should never have accepted the elves in the first place.”
He didn’t even want the help of Dwarves as his experience with the Elves soured him to non-human racial allegiances, but he definitely didn’t want to ally with the Blood Elves.
" Garithos returned to the front and left Kael’thas awaiting orders. Then, an emissary sent by Garithos informed Kael’thas that he had to engage the strike force from the west, but also recalled all foot soldiers, cavalry and support teams to the front, leaving Kael with only his blood elven troops. Garithos had hoped that the elves would fall before the Scourge, and no longer be his problem; the missions given to Kael’s greatly reduced force were intended to be suicidal, impossible for the elves to complete.
Garithos defeated the undead in the front with the forces he had amassed. However, Kael would have surely been defeated had he not accepted another offer from Vashj and her naga to aid in the destruction of the western Scourge forces."
This is the only citation where he could have been considered ‘genocide’ (huge stretch), he just simply abandoned him DUE TO HIS HATRED FOR BLOOD ELVES and their abandonment of HIS FAMILY THAT DIED.
" Garithos returned with soldiers and saw the naga leaving the scene. With proof that the blood elves were in league with the naga, Garithos condemned Kael’thas and all of his men to death. He explained that he never trusted the elves, and felt it was a mistake to accept them into the Alliance in the first place. He arrested Kael and his servitors and locked them in the dungeons of Dalaran to await their execution."
This would later lead to Vashj and Kael’thas joining Illidan later on.
"Garithos, though furious, turned his attention back to the advancing undead. He pushed them back into Plaguelands, but was soon faced with the dreadlords, Detheroc and Balnazzar. Detheroc’s powers of mental domination allowed him to enslave Garithos and his men. The humans served Detheroc and Balnazzar for some time until they were attacked by Sylvanas and Varimathras. Sylvanas slew Detheroc, and Garithos was freed from his bondage.
Garithos was suspicious of Sylvanas, but she explained that she was no longer a member of the Scourge. She offered to help Garithos and his men reclaim their lands in exchange for their assistance in defeating the final dreadlord, Balnazzar, who remained in control of Lordaeron. Garithos accepted the banshee’s terms - but she had no intention of keeping her word.
Seven of Garithos’ advisors including Kristoff, warned Garithos against allying with the rebel undead, but Garithos would not change his mind. Fearing the undead would betray the Alliance, Kristoff left for greener pastures."
So, not only did he continue to fight the Lordaeron and constantly warded off the Scourge, but he also decided to help Sylvanas DESPITE NOT TRUSTING HER.
“Detheroc had acquired a human puppet, Garithos, and his men, and was using them to protect himself. Sylvanas had his scouts possessed and then infiltrated his base while their guard was down. As they slept, Sylvanas swept through the twin bases and slaughtered any before her. Though they eventually awoke and raised the alarm, it was too late. Sylvanas disabled the humans and ravaged Detheroc’s forces, eventually coming to the dreadlord himself, and killing him swiftly. With the dreadlord dead, Garithos was freed from his mental control. Sylvanas saw him as arrogant and foolish but felt that she could use him. She lied and promised to relinquish control of the Capital to him if he helped her kill Balnazzar.”
So, she only saved him for the sole purpose to use and then dispose of him (Poetic given the circle), but yet again, a former Elf looking to betray him.
“Garithos was lightly amused, but quickly changed his mood and ordered the duo to leave his city. Instead, Sylvanas ordered Varimathras to kill Garithos as well. Varimathras happily complied and killed Garithos, who was cannibalized by ghouls moments later.”
Even with his attitude to make them leave, she saved him, he helped her.
Garithos’ hate for all others was justified. Let it rest and stop using him as an example of “Alliance did things wrong.” He did them because of key Horde enemies/people that led him to them events and ULTIMATELY killed by one.

Now the undead, they’ve walked the land of the living for too long. Can’t even make a proper brew. It’s literal sewer water, and the sewer’s been slimed for over a year so I’m definitely not trying it now.

But hey, got a faction right over here you might find some common ground with. It’s called the scourge. Or if you prefer, over here we’ve got the burning legion. Either will allow you to commit all the warcrimes and “exterminate all life” plots your little tryhard edgelord heart desires.

I mightve committed to destroying the Burning Legion at first but maybe Sargeras was right we need to prepare to defeat the void lords. And in order to do this we must destroy the world souls so they cannot be corrupted.

Exactly. The horde established themselves as honorable savages in WC3. Blizzard has done a lot to destroy the nobility of the once great horde.
My hopes have also been crushed.
At the end of the day, blizzard can only write simple and chaotic evil villains. Nothing beyond “Everyone must die because reasons” is ever decently developed by blizzard.
The Lich King is the biggest exemple of this. The story of Ner’zhul/Arthas was probably the best Blizzard ever wrote because he was simple villain pre-wrath. The moment they tried to give reason to the Lich King’s evil the story fell apart and we got the meme “There must always be a Lich King”.
That makes me very worried about N’zoth, since, like all lovecraftian inspired villains, his logic should be be far too complex for mortals to even understand. Mark my words, blizzard will manage to ruin N’zoth just like they ruined Sylvannas.
