So have 2 choices which is more easiest and relaxing to 60 and also easiest to do mythics+/raiding contents to Dragonflight expac ?
WW Monk is currently much better for raids and M+, and will likely continue so into DF unless Paladin receives significant changes that include improving their raid utility.
ApM is a bit of a harder question, without haste Paladin tends to have a fair few free GCDs so they aren’t intensive, but with haste you will absolutely be smashing buttons every GCD.
Monk on the other hand has a faster 1s GCD, however being an energy class they are restricted on how quick they can use their abilities, similar to Rogue.
Overall I would imagine levelling ApM would be pretty similar with both with Monks maybe being slightly higher, however Monks are much more valuable so that would be my personal pick.

I started playing a ret recently and am probably gonna play him next season. It’s fun and fairly simple. Compared to my prot warrior. Necrolord prot warrior hurts my wrist.
I used to play ww back in legion and it was very fun so I’m sure it’s no different now
They are not even in the same ballpark. Paladin is so much easier than WW monk it isnt even comparable.

For example, ret paladin’s rotation is exactly the same for single target as it is for aoe, with the exception of choosing to use your single tagret dps spender or your aoe target spender.
What about solo old contents (Legion/BFA) ?
WW has lower apm, but ret is easier to play. Both are good solo specs.
I’m not knowledgeable enough about WW but as Ret I can solo some BfA raid bosses already.
WW is generally doing something every 1s GCD. You do have dead time but it’s few and far between.
No idea how Ret plays.
Having played both, APMs aren’t too far apart…I think ret is slightly higher than WW. Difficulty wise, ret is a lot easier to play well than WW. There are a lot of conditions to watch for if you want to play WW to maximum potential.
If you’re doing bleeding edge content, I’d go with WW for now. If you want something easier, go Ret. If you’re just doing casual content that doesn’t require peak optimization, play whatever you enjoy the most.
What about elites/rares bosses to 60 which can solo them well ?
Just play ret… you can basically solo everything under the Sun.
