Blizzard has been reprinting their old books recently:
https://wow.gamepedia.com/Blizzard_Legends
If you could choose, which books would you want reprinted? My preference is the:
Warcraft legends series, https://wow.gamepedia.com/Legends
Warcraft Death Knight(Was a broke dude at time and I am kicking myself for not buying it) https://wow.gamepedia.com/Death_Knight_(manga)
and https://wow.gamepedia.com/Shadow_Wing(although I wish they would completed the trilogy!)
Eh most warcraft books are awful. Is there something that this has an impact on the story? What Is the interest here? I’d rather have short stories compared to just “Story DLC”

Well both Kolitra/Thassarian are back in Shadowlands so the death knight manga is a pretty interesting read about them.
The Legends manga talk about both Darkmoon Faire and the Headless Horseman’s lore so those are always relevant.
Also, most people seem to enjoy The most recent short story about Matthias/Flynn and I expect would enjoy https://www.amazon.com/World-Warcraft-Exploring-Azeroth-Kingdoms/dp/1950366278/ref=pd_rhf_pe_p_img_3?_encoding=UTF8&psc=1&refRID=R8TBS1T30JY57KWBYVWG
Most of those books are non-canon to my knowledge anyways.
No, they are not, they are canon. As an example the death knight comic is reference by them in shadowlands:
Koltira: Do you recall anything from the moment of your death, Thassarian? Did the Kyrian come for your soul?
Thassarian: If they did, then I have no memory of it.
Koltira: I see. What fate do you supposed the Arbiter would have chosen for us?
Thassarian: It is pointless to speculate. What has happened cannot be changed. We can only move forward, as inexorable as Death itself.
Thassarian: And what of you, Koltira? What do you remember of your own demise?
Koltira: I remember you were the one who killed me.
Thassarian: You are most welcome.

Wasnt that established like years ago Hell I remember something about it from Wotlk or cata or something (maybe legion even). ANyways then there is the whole rise of the horde mumbo jumbo etc that literally got soft retconned through Chronicles
They made the RPG books uncanon around that time. But everything else is in fact canon unless explicitly changed.
For example the Chronicles book takes a thousand yard look at the whole Rise of the Horde, but the Rise of the Horde book is what provides in character detail on the events.
And that doesn’t even take into consideration when in game events are just flat out the non-canon versions of events and set up that way for gameplay purposes. The most recent example is the War of the Thorns in damn near it’s entirety.

US Amazon seems to have a Blizzard Legends re-print of the Death Knight manga available now, or at least it’s labeled as Blizzard Legends on Amazon. I just read it this week after I picked it up in e-book form as part of the WoW book deal they had on Humble Bundle a few weeks ago, but I can’t seem to find it as a standalone e-book for purchase anywhere. I highly recommend it if you can find it and like death knight lore.
Death Knight is definitely canon, as are any stories that aren’t outright contradicted. The Ashbringer comic gives a ton of backstory to the Mograine family, for example, not all of which is seen in game. It also goes as far as saying who killed Alexandros in Vanilla Naxxramas and Renault in Vanilla Scarlet Monastery (spoiler: not us murderhobo adventurers).
