What’s your objective? To make money? Or to make crafted gear for yourself?
Leatherworking has access to 440/455/470 gloves and pants which are pretty good because you can keep on scrapping and remaking the gear to force the secondary stats you want (though this can get expensive). They also automatically come with a gem socket.
Mining can only go with Engineering for a WW Monk. You can’t use the armor made by Blacksmithing.
Right now, the best profession for helping your character is Alchemy. You are always going to need he potions and flasks.
