I know the site was taken over by Wowhead, but I wonder if they will do some sort of spin off for the original quest lines in celebration of Vanilla coming back. Would you guys use it?
I would use it. I loved Thottbot. Used it all the time back in the day. If it remains like it was, yes, most definitely use it.
Probably not. Wowhead is already doing it's own classic version, and given their mess when it comes to advertising, I would not expect them to do anything that might decrease their income or have viewers go elsewhere. (If they still own the domain name, the most likely result if being forwarded to the classic WOWhead.)

I've heard they are making a thottbot themed version for the classic wow pages/site.
They originally preserved a section in their forums for the Thottbot community. I doubt there's a large demand for it, but some of us would definitely feel nostalgic if they did. Maybe have Wowhead logo at the top, but have Thottbot in small font underneath that somehow.

Classicdb.ch is pretty good. I like it because it's just data, no adds, no fluff. Wowhead is pretty awful.
