I want to throw a Macross reference, but…
The Curse of Flesh seems to have mutated at some point in the past with the Vrykul. Half the Vrykul stayed their giant size and an offshoot shrunk down to humans, making them more malleable. Even giving them the ability to breed with species not descended from Titan constructs like the elves.
Blizz has never explained why this happened, or why it hasn’t really happened to the other Curse of Flesh races.
More so, they are “deformed” vrykul that were supposed to be disposed of to keep the race “pure”. Parent’s being parents, not all vrykul could do this. So they took them to the eastern kingdoms to survive.
Boom. The human race lol.

And Mimiron is kinda large, himself. Larger than any gnome, anyway.
Common creation trope from humanity, that those that came right after the start of creation are greater than those that became farther from the start of it all.

If we go into details, we’d be at it for a while but I speculate that our once-rocky/metallic bodies cannot maintain the size. Humans are the “most balanced” thus are as tall as they are based on the amount of flesh taken whereas the Dwarves are rather stocky yet stout yet are the least affected because they are considered FAR stronger than most humans. Gnomes would feel it the most, they aren’t meant to be large in any possible way with how their structure is built.
If ignoring any of this… I dunno, I just guessed my assumptions why. The Vrykul are far more capable to retain their size for a reason, just being able to support their own size before they suffer a case of gigantism whereas Dwarves aren’t necessarily suffering from dwarfism where a Human stature with dwarfism would otherwise suffer in conditions. Which again, just assumng.
It could be the result of Vrykul having children with non-vrykul races. It’s possible humans are half Vrykul and half elf, or even half troll. Which would also explain why elf + human children can happen.

The Vrykul to Human story always reminded me of the Greek god story of Cronus and Rhea, where Cronus ate his children to prevent them from overthrowing him, and Zeus was secretly saved by Rhea and raised on the island of Crete until he was old enough to save his siblings.
It also reminds me of the Norse story of Loki, where Loki is smaller than the Frost Giants and Odin takes him in becoming an Asgardian.
The Vrykul/Human story in WoW probably has some inspirations from these myths.
